Method

- Add the pistachios to a food processor and pulse until finely ground.
- Add the oat flour, melted butter, maple syrup, vanilla, and salt, then process until a moist crumbly mixture forms.
- Press the pistachio mixture firmly and evenly into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then remove it from the oven and let it cool slightly.
- Add the blackberries, maple syrup, and lemon juice to a small saucepan over medium heat.
- Mix the cornstarch with the water, add it to the berries, and cook until the mixture thickens into a glossy swirl. Set aside to cool.
- Blend the cottage cheese until completely smooth.
- Whisk or blend the cottage cheese, Greek yogurt, eggs, maple syrup, vanilla, cornstarch, and salt until creamy.
- Pour the creamy filling over the partially baked pistachio base.
- Spoon the blackberry mixture over the filling and gently swirl it with a knife or skewer.
- Sprinkle chopped pistachios over the top.
- Bake for 22 to 25 minutes, or until the edges are set and the center still has a slight wobble.
- Cool the bars completely at room temperature, then refrigerate for at least 4 hours.
- Lift the chilled dessert from the pan, slice into 12 bars, and add fresh blackberries or a white chocolate drizzle if desired.
