Brownie Protein Bites

These no-bake brownie protein bites are soft, fudgy, chocolatey, and easy to prepare with oats, cocoa powder, protein powder, and nut butter for a convenient high-protein snack.

Ingredients
  

Main Ingredients:
  • 1 cup rolled oats
  • 1/2 cup chocolate protein powder
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup natural peanut butter or almond butter
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine salt
  • 2 to 4 tablespoons milk as needed
Optional Add-Ins:
  • 1/4 cup mini chocolate chips
  • 2 tablespoons chopped walnuts
  • 1 tablespoon chia seeds
  • cocoa powder for dusting

Equipment

  • 1 food processor
  • 1 Large mixing bowl
  • 1 rubber spatula
  • 1 measuring cups
  • 1 Measuring spoons
  • 1 small cookie scoop
  • 1 parchment-lined plate or tray

Method
 

  1. Add the rolled oats to a food processor and pulse until they form a coarse flour.
  2. Add the protein powder, cocoa powder, and salt, then pulse briefly to combine.
  3. Add the peanut butter, maple syrup, and vanilla extract.
  4. Process until the mixture begins to form a soft, fudgy dough.
  5. Add milk 1 tablespoon at a time until the mixture holds together when pressed. Avoid adding too much liquid.
  6. Fold in the mini chocolate chips, walnuts, or chia seeds if using.
  7. Use a small cookie scoop to portion the mixture into 12 equal pieces.
  8. Roll each portion gently between your palms to form a smooth bite.
  9. Place the brownie protein bites on a parchment-lined plate or tray.
  10. Refrigerate for at least 30 minutes before serving so the bites become firmer and easier to handle.

Notes

Storage:
Store the brownie protein bites in an airtight container in the refrigerator for up to 7 days.
Freezing:
Freeze the bites in a freezer-safe container for up to 2 months. Let them soften for a few minutes before eating.
Texture Tip:
The mixture should feel soft and fudgy but firm enough to roll. If it is too dry, add milk 1 tablespoon at a time. If it becomes too sticky, add a small amount of oat flour or protein powder.
Protein Powder Note:
Different protein powders absorb liquid differently, so adjust the milk gradually.
Nut Butter Note:
Use a smooth, well-stirred natural peanut butter or almond butter for the most even texture.
