  • 8 ounces high-protein pasta
  • 1 pound cooked chicken breast sliced or shredded
  • 1 tablespoon olive oil
  • 2 cups baby spinach
  • 1 cup cherry tomatoes halved
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Creamy Protein Sauce
  • 1 cup cottage cheese
  • 1/4 cup milk
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic
  • 1/2 teaspoon Italian seasoning
  • Optional Toppings
  • 2 tablespoons chopped parsley
  • 1 tablespoon extra parmesan cheese
  • 1/4 teaspoon red pepper flakes

Method
 

  1. Cook the pasta according to package directions until al dente, then reserve 1/4 cup pasta water and drain.
  2. Add cottage cheese, milk, parmesan cheese, lemon juice, Dijon mustard, garlic, and Italian seasoning to a blender.
  3. Blend until the sauce is smooth and creamy.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add spinach and cherry tomatoes, then cook for 2–3 minutes until the spinach softens.
  6. Add cooked chicken and pasta to the skillet.
  7. Pour in the creamy protein sauce and stir until everything is evenly coated.
  8. Add a splash of reserved pasta water if the sauce needs thinning.
  9. Season with salt, black pepper, and garlic powder.
  10. Serve warm with parsley, parmesan, or red pepper flakes if desired.
