Method
- Prep pan or mold: Use a silicone mini muffin pan, candy mold, or a parchment-lined tray if you want to scoop rustic mounds instead. Silicone gives the cleanest release.Mix the creamy base: In a medium bowl, stir together the Greek yogurt, peanut butter, honey, vanilla, and salt until fully smooth. Fold in the protein powder last, mixing just until the base is thick, creamy, and evenly combined.Check the texture: The mixture should be spoonable but not runny. If it feels too loose, add 1 to 2 more tablespoons Greek yogurt plus a little extra protein powder. If it feels too thick, loosen it with 1 tablespoon yogurt.Portion into bites: Scoop the mixture into 12 small portions. Smooth the tops lightly with the back of a spoon. Add a tiny swirl of peanut butter to the top of each one if you want a more finished look.Add toppings: Sprinkle chopped peanuts, mini chocolate chips, or a small pinch of flaky salt on top. Keep toppings light so the bites freeze evenly.Freeze until firm: Freeze for about 2 hours, or until the bites are set and easy to pop out cleanly.Serve with a short rest: Let them sit at room temperature for 2 to 4 minutes before eating. That short rest softens the texture and brings the peanut butter flavor forward.
Notes
Yogurt Texture: Use the thickest strained Greek yogurt you can find to prevent icy bites.
Room Temperature Rest: A 2–4 minute rest at room temperature softens the texture and brings the peanut butter flavor forward.
Meal Prep & Storage: Store frozen bites in an airtight container with parchment paper between layers for up to 1 month. Avoid repeated melt-and-refreeze cycles.
