- Preheat the oven to 325°F and line an 8x8-inch baking pan with parchment paper.
- Add cottage cheese, eggs, maple syrup or honey, vanilla extract, and melted coconut oil or butter if using to a blender.
- Blend until the mixture looks completely smooth and no cottage cheese texture is visible.
- In a mixing bowl, whisk together cocoa powder, chocolate protein powder, oat flour, baking powder, and salt.
- Pour the blended cottage cheese mixture into the dry ingredients and stir until a thick brownie batter forms.
- Fold in the dark chocolate chips.
- Spread the batter evenly into the prepared baking pan.
- Bake for 22 to 28 minutes, or until the edges are set and the center still looks slightly soft.
- Let the brownies cool in the pan for at least 20 minutes before slicing.
- Slice into 9 brownies and serve.
Notes
For the fudgiest cottage cheese brownies, do not overbake them. The center should still look slightly soft when you remove the pan from the oven. Store leftovers in an airtight container in the fridge for up to 4 days.
