  • 1 1/2 pounds boneless skinless chicken breast cut into bite-size pieces
  • 2 tablespoons cornstarch
  • 1 tablespoon neutral oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 2 tablespoons sesame seeds
  • 2 scallions sliced, for garnish
Sesame Sauce
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon ketchup
  • 1 tablespoon water
  • 1 teaspoon cornstarch

Method
 

  1. Cut the chicken into bite-size pieces and pat dry with paper towels.
  2. Toss the chicken pieces with cornstarch until lightly coated.
  3. Heat neutral oil in a large skillet or wok over medium-high heat.
  4. Add the chicken and cook for 6–8 minutes, stirring occasionally, until golden and cooked through.
  5. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ketchup, water, and cornstarch.
  6. Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
  7. Pour the sesame sauce over the chicken and stir well to coat.
  8. Cook for 2–3 minutes until the sauce thickens and becomes glossy.
  9. Sprinkle with sesame seeds and sliced scallions, then serve warm with rice, quinoa, or vegetables.
