- Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish.
- Cook the lasagna noodles until al dente according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add lean ground turkey and cook until browned and fully cooked.
- Add onion, garlic, Italian seasoning, salt, and black pepper. Cook for 3 to 4 minutes, until the onion softens.
- Stir in marinara sauce, tomato paste, and water or broth. Simmer for 8 to 10 minutes so the sauce thickens slightly.
- In a mixing bowl, combine cottage cheese, egg, parmesan, chopped spinach, Italian seasoning, and garlic powder.
- Spread a thin layer of meat sauce in the bottom of the baking dish.
- Add a layer of lasagna noodles, then spread on some cottage cheese filling, meat sauce, and mozzarella.
- Repeat the layers until the ingredients are used, finishing with meat sauce, mozzarella, and parmesan on top.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for another 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly browned.
- Let the lasagna rest for 15 minutes before slicing so the layers hold together.
