  • 1 cup Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup mango puree
  • 1 cup fresh raspberries
  • 1/4 cup coconut flakes optional
  • Fresh mint optional

Method
 

  1. In a mixing bowl, whisk together chia seeds, almond milk, Greek yogurt, maple syrup, and vanilla extract.
  2. Let the mixture sit for 5 minutes, then stir again to prevent clumps.
  3. Cover and refrigerate for at least 4 hours or overnight until thick and creamy.
  4. Spoon mango puree into jars or serving glasses.
  5. Add the chia pudding layer over the mango puree.
  6. Top with fresh raspberries, coconut flakes, and mint if desired.
  7. Serve chilled.

Notes

For best texture, stir the chia mixture twice before chilling.
Use ripe mango for a naturally sweet flavor.
Store in airtight jars in the refrigerator for up to 4 days.
Add toppings just before serving for the freshest texture.
