Ingredients
  

  • For the Beef:
  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons hot honey
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon rice vinegar or apple cider vinegar
  • 1 teaspoon chili garlic sauce optional
  • For the Bowl Base:
  • 2 cups cooked rice
  • 2 cups roasted broccoli
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 avocado sliced
  • 2 green onions sliced
  • Optional Finishers:
  • Greek yogurt drizzle
  • sesame seeds
  • lime wedges
  • extra hot honey
  • chopped cilantro
  • red pepper flakes

Method
 

  1. Prep the bowl components by cooking the rice, slicing the vegetables, and preparing any toppings.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the ground beef and cook until browned, breaking it apart with a wooden spoon.
  4. Add the garlic, smoked paprika, ginger, salt, and black pepper.
  5. Stir in the hot honey, soy sauce, lime juice, vinegar, and chili garlic sauce if using.
  6. Cook for 2 to 3 minutes until the beef is glossy and coated in the sweet and spicy sauce.
  7. Taste and adjust the balance with more lime juice, hot honey, or chili sauce if needed.
  8. Build the bowls with rice, ground beef, broccoli, carrots, cucumber, avocado, and green onions.
  9. Finish with Greek yogurt drizzle, sesame seeds, lime wedges, and extra hot honey if desired.

Notes

Storage:
Store the beef, rice, and vegetables in separate airtight containers in the refrigerator for up to 4 days.
Reheating:
Reheat the beef and rice until hot, then add fresh cucumber, avocado, green onions, drizzle, and lime after warming.
Freezing:
The cooked hot honey ground beef can be frozen for up to 2 months. Freeze without fresh vegetables or avocado.
