  • 8 ounces high-protein pasta or elbow macaroni
  • 1 pound lean sirloin steak thinly sliced
  • 1 tablespoon olive oil
  • 1 medium onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • Cheese Sauce
  • 1 cup low-fat milk
  • 1/2 cup cottage cheese blended smooth
  • 1 cup shredded reduced-fat cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Method
 

  1. Cook the pasta according to package directions until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the sliced steak, season with salt and black pepper, and cook for 3–4 minutes until browned. Remove from the skillet and set aside.
  4. In the same skillet, add onion and bell peppers. Cook for 5–6 minutes until softened.
  5. Stir in garlic and Worcestershire sauce, then cook for 30 seconds until fragrant.
  6. In a separate pot over low heat, whisk together milk, blended cottage cheese, cheddar cheese, mozzarella cheese, Dijon mustard, garlic powder, and smoked paprika.
  7. Stir until the cheese sauce is smooth and creamy.
  8. Add cooked pasta, steak, peppers, and onions to the cheese sauce.
  9. Stir everything together until evenly coated and warmed through.
  10. Serve hot with extra black pepper or fresh parsley if desired.
