Ingredients

  • 1/2 cup zero-sugar sweetener
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup oat flour or almond flour
  • 1/4 cup chocolate protein powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sugar-free chocolate chips

  • extra sugar-free chocolate chips for topping
  • 1 tablespoon cocoa powder for dusting
  • 1 tablespoon almond butter optional
  • pinch of instant coffee optional

Method
 

  1. Preheat the oven to 350°F and line an 8x8 baking pan with parchment paper.
  2. In a mixing bowl, whisk together the Greek yogurt, eggs, zero-sugar sweetener, and vanilla extract until smooth.
  3. Add the cocoa powder, oat flour or almond flour, protein powder, baking powder, and salt.
  4. Mix gently until a thick brownie batter forms. Do not overmix.
  5. Fold in the sugar-free chocolate chips.
  6. Spread the batter evenly into the prepared baking pan.
  7. Sprinkle extra sugar-free chocolate chips on top if using.
  8. Bake for 20 to 22 minutes, or until the edges look set and the center is still slightly fudgy.
  9. Let the brownies cool in the pan for at least 20 minutes before slicing.
  10. Cut into 9 brownies and serve.

Notes

Storage:
Store cooled brownies in an airtight container in the refrigerator for 4 to 5 days.
Reheating:
Enjoy chilled for the fudgiest texture, or microwave one brownie for 8 to 10 seconds if you want it slightly warm.
Freezing:
Freeze sliced brownies in a freezer-safe container for up to 2 months. Thaw in the refrigerator before serving.
